Optimal Brewing Temperature

The Optimal Brewing Temperature would be 195º - 205ºF (92º - 96ºC). This is the temperature of the water as it sprays from the showerhead, not as it exits the brew basket. Water temperature between 195º - 205ºF provides soluble concentration of 1.15% - 1.35% (this is the proportion of dissolved solids to water in the finished product) and soluble yield of 18% - 22% (this is how much of the total amount of coffee in the brew basket dissolves– the highest yield possible is 28% but that would lead to a bitter taste).


To meet specifications, as the coffee exits the brew basket it needs to be at least 140 ºF at the beginning of the brew cycle and at least 175 ºF by the end of the brewing cycle. The temperature is not the same as when it sprayed from the showerhead because the water temperature is affected by the lower temperature of the coffee in the brew basket, the temperature of the brew basket before the brewing started, and the ambient temperature of the room.


Optimal Holding Temperature is 175º - 185ºF (80º - 85ºC). This is the optimal temperature the keep warm plate would keep the carafe at.

  • To meet specifications, coffee must remain between 170°F and 185°F in the carafe for up to 30 minutes after the brewing is complete (we give 5 ºF of leeway).
  • The acceptable range of temperature that the coffee exits the brew basket would be approximately 140 ºF - 175 ºF.

Coffee not staying warm or not hot enough

If the consumer states that the coffee is not hot enough or it is not staying warm please check the following:

  • Inquire how long the coffee maker was on. Some models have an automatic shutoff feature. This is a safety feature that automatically turns the coffee maker off after a certain amount of time.
  • If the unit is a has a thermal carafe and no hot plate, make sure the lid is closed properly.

Thermal Carafe units (no hot plate)

  • A thermal carafe will keep the coffee hot for approximately 2 hours
  • Prior to making the coffee rinse the inside of the carafe with hot/warm water. This will prevent the temperature of the coffee from dropping too much when it hits the inside of the carafe.
  • The thermal carafes do not use a keep warm plate, the unit shuts off after the brew cycle is complete.
  • Be sure the carafe lid is in the "Lock" position when coffee is not being poured. This will retain the heat in the carafe.

  • Use if customer states that the coffee is too hot or too cold.

Thermal Carafe - Poor Temperature Retention

  • Use this reason if the consumer states there is an issue with the thermal carafe and it is not retaining the temperature
