Temperature Calibration Complaints – “Oven Doesn’t Reach Set Temperature”

Our full-size ovens use advanced heating elements and convection. The oven has been calibrated to provide the expected results for most recipes and package instructions so that additional temperature adjustments are not required. Therefore, the temperature in the oven will be lower than the set point.

Generally recipes need to be adjusted for convection by reducing the temperature specified in the recipe or package instructions by between 25° and 50°. In addition to convection, our ovens use quartz tube heaters, which emit more infrared radiant heat energy than conventional calrod heating elements do, and cook food more efficiently. Our ovens are calibrated to provide the expected results for most recipes and package instructions, taking into account these technologies, without requiring users to calculate adjustments on their own.
