Buffet Range - Temperature
The dial on a burner corresponds to the rate of heat output. A burner doesn't have a thermostat; it doesn't know or care what the temperature of the pan is. The consumer must adjust the rate of heat output to obtain the desired temperature. We cannot say "turn the dial to X, and your pan will reach X degrees" because it varies greatly depending on pan construction, thermal conductivity, surface area, what food is being cooked and other factors related to heat dissipation like the ambient temperature of the room.
